Join our service team at Fort George and work across the full rhythm of the venue. Daytime shifts can be cafe style service in the garden, keeping things relaxed, fast and friendly. Evenings move into structured a la carte restaurant service with higher pace and sharper detail. On club nights you will look after drink tables and guest flow, and on wedding days you will support event service where timing and teamwork matter. Join our bar team at Fort George and work where the energy shifts with the day. We run two bars in the garden for relaxed daytime service, and on weddings and event nights we open additional bar stations on the first floor and the roof terrace. Some shifts are classic bartending with speed, accuracy and consistency behind the bar. Other shifts are more like a cafe style service bartender role, supporting the garden and serving drinks directly to guests. If you like variety, pace, and a venue that takes service seriously without taking itself too seriously, you will fit in.
You run the front door at Fort George and set the tone from the first hello. You manage reservations and walk-ins in OpenTable, keep seating flowing with the floor team, and make sure every guest feels welcomed and looked after. It’s a fast, people-facing role for someone organised, calm under pressure, and naturally warm.
You keep service moving. You run food and drinks, clear and reset tables fast, and support bar stations with restocking and clean-down. This is a physical, high-tempo role across restaurant service, garden bars, weddings, and event nights. Many of our best waiters and bartenders started here.
You are the Head Chef’s right hand and a key leader in the kitchen. You drive standards, pace, and consistency across à la carte service, weddings, and event production, while coaching the team and keeping food cost and hygiene under control. If you like high standards, big nights, and leading from the front, you will fit in.
You rotate across stations and keep the kitchen strong where it’s needed most. One day you’re cold prep, the next you’re on hot line or supporting pastry. This is a fast, high-standard role for a flexible cook who learns quickly, follows recipes, and stays calm during weddings and peak event weeks.
You run the cold section and help desserts stay sharp. You prep salads, veg and cold starters with clean hands and clean standards, then support pastry with plating and prep when service ramps up. A great role for someone organised, detail-focused, and proud of doing the basics perfectly.
You keep the kitchen running clean, fast, and safe. You handle potwash and dish flow, keep the wash area sharp, and support basic prep when needed. This is a hands-on role for someone reliable, hardworking, and proud of doing the foundation work properly.

You drive guests, clients, and staff between Vis and the venue, keep the vehicle spotless and presentable, and stay calm and professional even on busy wedding and event nights. You keep Fort George’s back office organised and under control. You handle invoices and delivery paperwork, support stock and cost-centre tracking across kitchen/bar/restaurant, and keep HACCP and compliance records structured and audit-ready. This role suits someone precise, fast, and calm in a busy seasonal operation.
You keep Fort George clean, safe, and guest-ready every day. You clean high-traffic guest areas and toilets, handle venue laundry, and help reset spaces before and after service, weddings, and event nights.
